Buffalo Chicken Casserole

This dish is not only healthy, but comforting!


Ingredients:


  • 1 medium spaghetti squash

  • 1 cup lite ranch or blue cheese dressing (we suggest Walden Farms)

  • 1/4 cup Frank's Red Hot Buffalo Sauce

  • 4 oz low fat or nonfat cream cheese (softened)

  • 2 cups shredded cooked boneless skinless chicken breast

  • 1 cup shredded low fat cheese

  • green onions (optional, for topping)



Instructions:


  1. Preheat the oven to 400 degrees.

  2. Cut a spaghetti squash lengthwise. Scoop out center pulp/seeds. Place onto a lined baking sheet cut side down and bake for 45 minutes or until a knife goes in with very little resistance. Remove from the oven and set aside to cool.

  3. Leave oven on.

  4. In large bowl, stir together the dressing, hot sauce, and cream cheese. Stir in the shredded chicken.

  5. Use a fork to shred the inside of the spaghetti squash into the bowl with the chicken mixture. Stir together.

  6. Transfer the mixture to a large casserole dish. Top with shredded cheese. Place in the oven for 10 minutes, until the cheese melts.

  7. If desired, drizzle the top with extra dressing and sprinkle with green onions
