Caulitater Salad

This one is couldn't be any more simple! It will quickly become the new favorite at all of the tailgate parties! To change it up, you can add bacon crumbles for extra flavor.


Ingredients:


  • 1 large head of cauliflower cut into bite size pieces

  • 3 hard boiled egg whites (yolk optional)

  • 1 cup of light mayonnaise

  • 3 pickle spears finely chopped

  • 2 tbsp finely minced onion

  • 2 tbsp mustard

  • 1/4 tsp salt pinch of black pepper

  • *Extra splash of Pickle Juice



Instructions:


  1. Bring a pot of salted water to a boil over high heat.

  2. Add chopped cauliflower. Cover and cook 5 minutes.

  3. Drain and rinse under cold water to stop the cooking process.

  4. Combine cauliflower and all remaining ingredients.

  5. Add extra splash of pickle juice if too thick.

  6. Chill in fridge for at least 30 minutes to allow flavors to blend.

  7. When ready to serve sprinkle with salt and pepper as desired.
